{"id":5994,"date":"2023-04-11T05:28:00","date_gmt":"2023-04-11T09:28:00","guid":{"rendered":"https:\/\/panoramitalia.com\/?p=5994"},"modified":"2023-04-18T10:44:04","modified_gmt":"2023-04-18T14:44:04","slug":"italy-may-owe-the-invention-of-carbonara-to-america","status":"publish","type":"post","link":"https:\/\/panoramitalia.com\/index.php\/2023\/04\/11\/italy-may-owe-the-invention-of-carbonara-to-america\/","title":{"rendered":"Italy May Owe the Invention of Carbonara to America"},"content":{"rendered":"<h2 class=\"wp-block-heading\">A historian&#8217;s claim that the dish was inspired by American rations available in Italy during World War II is the cause of continuing controversy.<\/h2><p><\/p><hr class=\"wp-block-separator\"\/><p><\/p><p id=\"mntl-sc-block_1-0\"><em><strong>by Jelisa Castrodale for Food&amp;Wine<\/strong><\/em> &#8211; At the end of March, the Italian Ministry of Culture and the Italian Ministry of Agriculture announced that they had collectively nominated &#8220;Italian cuisine: sustainability and biocultural diversity&#8221; to be a candidate for the&nbsp;<a href=\"https:\/\/www.foodandwine.com\/french-baguette-receives-unesco-protection-6834544\">UNESCO<\/a>&nbsp;Intangible Cultural Heritage list.<\/p><p id=\"mntl-sc-block_1-0-2\">Although putting Italian cuisine \u2014&nbsp;literally all of it \u2014&nbsp;on the same list with the&nbsp;<a href=\"https:\/\/ich.unesco.org\/en\/RL\/art-of-neapolitan-pizzaiuolo-00722\" target=\"_blank\" rel=\"noreferrer noopener\">Neapolitan art<\/a>&nbsp;of pizzamaking,&nbsp;<a href=\"https:\/\/ich.unesco.org\/en\/RL\/truffle-hunting-and-extraction-in-italy-traditional-knowledge-and-practice-01395\" target=\"_blank\" rel=\"noreferrer noopener\">truffle hunting<\/a>, and other cultural&nbsp;<a href=\"https:\/\/www.foodandwine.com\/news\/italy-espresso-unesco-world-heritage-campaign\">points of pride<\/a>&nbsp;would be an incredible honor, those headlines have been overshadowed by claims that Americans had a hand in inventing a classic dish: carbonara.<\/p><p id=\"mntl-sc-block_1-0-4\">This started with a&nbsp;<em>Financial Times<\/em>&nbsp;piece about Alberto Grandi, a food history professor at the University of Parma and the author of a book that questions the origin stories of some Italian dishes. &#8220;Italian cuisine really is more American than Italian,&#8221; he&nbsp;<a href=\"https:\/\/www.ft.com\/content\/6ac009d5-dbfd-4a86-839e-28bb44b2b64c\" target=\"_blank\" rel=\"noreferrer noopener\">told the outlet<\/a>, citing Italian emigration to the United States as one of the contributing factors. Grandi noted that the first pizza restaurant &#8220;exclusively serving pizza&#8221; opened in New York in 1911, not in Naples.<\/p><p id=\"mntl-sc-block_1-0-8\">As hard as that might be for some Italians to swallow, the&nbsp;<em>Financial Times<\/em>&nbsp;also quoted food historian Luca Cesari, whose research has suggested that the pasta alla carbonara was &#8220;an American dish born in Italy&#8221; during World War II. Many historians accept that chef Renato Gualandi created the now-iconic recipe while cooking for members of the British and U.S. armies in 1944, and he used the &#8220;fabulous bacon, very good cream, some cheese, and powdered egg yolks&#8221; that the Americans had on hand.<\/p><figure class=\"wp-block-pullquote\"><blockquote><p>&#8220;It was a combination of Italian genius and American resources,&#8221; <\/p><\/blockquote><\/figure><p id=\"mntl-sc-block_1-0-10\">Eleonora Cozzella, the author of&nbsp;<em>The Perfect Carbonara: Origins and Evolutions of a Cult Dish<\/em>,&nbsp;<a href=\"https:\/\/www.bbc.com\/travel\/article\/20230331-carbonara-the-iconic-pasta-causing-a-dispute?\" target=\"_blank\" rel=\"noreferrer noopener\">told the BBC<\/a>.
