Glance at a dozen of them, and you&#8217;ll notice they weren\u2019t published by Italians. That\u2019s because, quite simply, pasta primavera, or springtime pasta, doesn&#8217;t exist in Italy. <\/p><p>When the flowers start to blossom, we revel in spring\u2019s finest bounty \u2060\u2014 peas, asparagus, squash blossoms, leeks and zucchini \u2060\u2014 but we rarely serve them together in one dish.<\/p><p>We noticed pasta primavera popping up on menus around the world, and we had to ask, &#8220;Why not?&#8221; and found ourselves imagining what pasta primavera would be like if it had originated in Italy. <\/p><p>So, here\u2019s what we came up with to showcase the season\u2019s prime produce, complete with a recipe for egg tagliatelle, an Italian springtime favorite.<\/p><figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"512\" src=\"https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-1024x512.jpg\" alt=\"\" class=\"wp-image-6353\" srcset=\"https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-1024x512.jpg 1024w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-300x150.jpg 300w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-768x384.jpg 768w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-1000x500.jpg 1000w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-670x335.jpg 670w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-600x300.jpg 600w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-120x60.jpg 120w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1-180x90.jpg 180w, https:\/\/panoramitalia.com\/wp-content\/uploads\/2023\/05\/Pasta-primavera-1.jpg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure><p><strong>Serves 6<\/strong><\/p><p><strong>Ingredients<\/strong><\/p><ul class=\"wp-block-list\"><li>2\u2153 cups flour, 11 oz.<\/li><li>Fresh asparagus spears (around), 3\/4 cup <\/li><li>shelled peas, 1\u00bc stick butter, <\/li><li>10 squash blossoms, <\/li><li>3 large eggs, <\/li><li>1 small zucchini, <\/li><li>1 leek, <\/li><li>Ricotta salata cheese, <\/li><li>Salt, Pepper<\/li><\/ul><p><strong>Prepare the pasta<\/strong><\/p><p>Sift the flour into a pile on your work surface, make a well in the middle, break the eggs into it and add a pinch of salt. Start by whisking the eggs with a fork, then by mixing the eggs into the flour \u2014 first whisk with a fork and then with your hands. <\/p><p>Knead the dough until it is smooth, uniform and elastic, then roll out the dough with a pasta machine and cut it into tagliatelle. (If rolling and cutting the dough by hand, first let it rest, covered with plastic wrap, for at least 1\/2 hour).<\/p><p>Save time: buy the fresh tagliatelle pre-made.<\/p><p><strong>Prepare the vegetables<\/strong><\/p><p>Bring a pot of water to a boil add salt and cook the peas and set a timer for 10 minutes. In the meantime, clean and chop the zucchini into your choice of round slices or \u00bd\u201d cubes. Once the peas have cooked for 10 minutes, add the zucchini to the pot. <\/p><p>After 5 minutes, add the asparagus spears, and let cook for 2 minutes. Use a slotted spoon to remove all the vegetables from the pot and place them in a bowl.<\/p><p>Bring a pot of salted water to a boil.
