Gambero Rosso – The Pizzeria of the Year award according to the Top Italian Restaurants guide takes us to China. The recognition goes to Bottega, the venture of Daniele and Paolo Salvo. The first establishment was opened in Beijing in 2014, followed by an expansion in 2016, also in the capital, and then an opening in Shanghai amid the pandemic. Presently, it’s the Shanghai location that takes the lead, with a formula finely tuned to the rhythms of the city. What impressed us? The consistent and high-quality Neapolitan dough across all three locations, precise in baking and ingredient selection. Complementing this is an informal and enjoyable ambiance, thanks to swift and professional service, along with a meticulously curated wine and spirits menu.
Pizza in their DNA
In a relatively short period, the Salvo brothers managed to captivate Beijing’s Sanlitun neighborhood with a serious offering of pizzas rooted in a family tradition passed down through generations since 1928. At Bottega, the undisputed star is the Neapolitan pizza. The crust boasts a pronounced crust, the dough is soft and fragrant, with a chewy bite. A delightful alternative to the classics in their repertoire is the pizza with mortadella and pistachio. Those fond of pasta alla genovese will find their match, a dish that brings together the Italian community in Beijing and Shanghai.
